Green Chile and Cilantro Chicken Skillet
Ingredients:
4 boneless, skinless chicken breasts
2 tbsp olive oil
1 tbsp green chile and cilantro seasoning mix
1 cup green chilies (roasted and diced, fresh or canned)
1 small onion, diced
3 garlic cloves, minced
1 cup chicken broth
1/2 cup sour cream
1/4 cup fresh cilantro, chopped (optional, for garnish)
Salt and pepper, to taste
Juice of 1 lime
Cooked rice or warm tortillas (for serving)
Instructions:
- Season the Chicken
- Pat the chicken breasts dry and season them with salt, pepper, and half of the green chili and cilantro seasoning mix.
- Sear the Chicken
- Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 3-4 minutes on each side until golden brown. Remove and set aside (they don’t need to be fully cooked yet).
- Cook the Aromatics
- In the same skillet, reduce the heat to medium. Add diced onions and garlic, sautéing for 2-3 minutes until fragrant and softened.
- Add Green Chilies and Seasoning
- Stir in the remaining green chili and cilantro seasoning mix, followed by the roasted green chilies. Cook for 1-2 minutes to let the flavors meld.
- Simmer the Sauce
- Pour in the chicken broth and stir to deglaze the pan. Bring to a simmer, then reduce heat to low.
- Return Chicken to the Skillet
- Place the chicken back into the skillet, cover, and cook for 8-10 minutes, or until the chicken is fully cooked (internal temperature of 165°F/74°C).
- Finish with Sour Cream and Lime
- Remove the chicken from the skillet and stir the sour cream and lime juice into the sauce. Taste and adjust seasoning if needed.
- Serve
- Spoon the sauce over the chicken and garnish with fresh cilantro. Serve with rice or tortillas for a complete meal.
